o 1 cup All-purpose flour / Maida
o ½ tsp Salt
o Required water to make dough
o 1/2 Onion finely chopped
o 1/2 cup Cabbage finely chopped
o 1/2 cup Carrot finely chopped
o 1 clove Garlic finely chopped
o 1 inch Ginger finely chopped
o 1/2 tsp Chili powder
o 1/4 tsp Pepper powder
o 2 tbsp Coriander leaves
o 2 tbsp Sesame Oil
o Salt to taste
o 2 Tomatoes chopped
o 5 dry red chilies
o 5 Kashmiri chilies (deseeded)
o 3 clove Garlic chopped
o Required Water
o 1/2 tsp Sugar
o Salt to taste
Into a mixing bowl add all purpose flour, salt and then gradually add water to form a soft non sticky dough, dough should not be very hard. After kneading cover with a wet cloth and set aside.
Now in a separate bowl add minced chicken, finely chopped onion, finely chopped Cabbage, finely chopped Carrot, finely chopped Ginger, finely chopped Garlic, coriander leaves, chili powder, pepper, oil, salt and mix well. Sprinkle some water and mix again, adding water keeps the chicken juicy.
Now dust the dough with some flour and spread it as thin as possible. With a help of sharp round mold cut it into small circles
Now take a spoon full chicken and keep at the center and start folding from one end. Seal both the ends and that's it.
Arrange the chicken Dumplings/Momos on a Steamer basket or greased idli plate and steam it for 15 -20 minutes.
Into a sauce pan add 2 tomatoes, chilies, Kashmiri chilies, garlic, water and cook for 15 minutes. Once the tomatoes are nice and soft turn off the heat and let it cool. Once cooled remove the skin of tomatoes and transfer it to a mixer jar. Add required salt, sugar and grind it to a smooth paste.
